Sea World Australia's Corkscrew has a pretty nifty headchopper under the monorail. It was quite amazing that they went with the old style Arrow restraints right up until a few years ago, before changing to the constrictive style in very recent years.

I can't believe no one has mentioned Desperado out in Primm. They actually try to restrict you from holding your hands up, I've never seen that on any coaster. That didn't stop me, but after the two tunnels, I had a hard time keeping them up. I've never thought any roller coaster was dangerous, until i rode that one. Although I may have broken the 'rules', it was still a great ride and a great experience.

While someone mentioned the Beast's upper helix tunnel, I feel the bottom section entrance was the best. Just ask Intamin Fan, he was there when I screamed like a girl actually thinking I was done going into that black hole.
Runners up: PKD's wonderful Grizzly tunnel and Disneyland's Matterhorn for overal ride headchoppers.

The first time I rode this thing was at night, from the second seat, expecting a nice, gentle ride. And, of course, that's exactly what I got... Save for one amazing moment of pure terror, when I unexpectedly found myself thrusting my hands down as far into the train as they would go, and cringing as I ducked. That still ranks as one of the biggest surprises I've ever recieved on a coaster.
Viper and Space Mountain are very good, of course... But I gotta be a maverick here and bring up the Cedar Creek Mine Ride. Sure, it's slow, and none too surprising... but isn't watching a section of track that looks about even with your shoulders slowy come to meet you a little unnerving? I find two spots like that on the ride.
Oddly, I found very little thrill from the headchopper on the old Steel Phantom. It was over before I could register that it was there.

Finally someone mentions Ghostrider! I was getting worried. The ride is practically one big headchopper. :) Lots of excellent ones on that ride. Even the first drop gives that sensation with the roof over the drop!
Phantom's Revenge (as was mentioned above) has an excellent one with the T-Bolt. That one made me throw my hands down.
Finally, disneyland's Matterhorn is downright scary. The caverns are so tight, it really makes you think twice before raising your hands. Of course, the current refurbishment involves the creation of larger passages for the train, so we will see if the headchoppers are still there when they are done.
