--EASTER--
Pros: kids can meet the easter bunny; lots of theme possibilities...maybe I should buy stock in pastel-colored paint?; wooden coaster could be named Jack Rabbit. Tea cups ride could have egg-shaped cars [heck, if Bonfante can do heads of garlic HW can do eggs!]; carousel could include bunnies, horses, and even easter baskets. How about a family/kiddie coaster called the Cotton Trail?
Cons: colored eggs and chocolate bunnies aside its the holiday celebrating the crucifiction [and resurrection] of Jesus Christ, which might prove to be a bit too heavy a topic. And with Christmas the park already has a religious holiday.
--THANKSGIVING--
Pros: lots of theme & costume possibilities with this one, too. The holiday even has a patriotic flare to it, something we know the park loves. Mayflower swing ship and turkey dinner restaurant anyone? Even the Indian River kiddie flume could be moved to that area.
Cons: Other than perhaps meeting Pocahontas or a turkey there isn't a holiday character for kids to meet...of course that isn't a problem with Halloween or 4th July sections so perhaps this is a non-issue. With Halloween and Christmas that quarter of the calendar is already well-served. Lastly, build a coaster that isn't well-received in the coaster community and Paula has to contend with "they built a turkey" comments ;)

--NEW YEARS---
Pros: Themeing with father and baby time lend itself to a family feel. A 'fake' New Year's could be celeberated nightly with fireworks and entertainment. Coaster could be named 'The Countdown'.
Cons: The 'liquor oasis' tend to always be dry and although the patrons at the park generally find themselves having fun at the start of the day, by the end of the day they come to the realization that the rest of the year awaits...thus downgrading their pleasant spirits. People leave feeling bad about having to go to work tomorrow.
--VALENTINE'S DAY--
Pros: Love, being a universal feeling, can be shared by families of all shapes and sizes. Cupid and the Heart are two very long standing 'objects' can be 'charachterized' into a mascot that will appeal to children. The 'sweet shoppe' and other food courts could be themed accordingly, in a positive atmosphere'. Coaster could be named 'Cupid's Arrow' if it was a launch coaster, or 'Tunnel of Love' if it was dark ride themed.
Cons: Those people that are single, and/or undateable, may feel alienated by the day, thus avoiding the entire area of the park.

Just think of the theming possibilities! Empty Tomb Raider: The Ride! The Ascension Sky Ride! Judas' Wild Ride (cost: 30 pieces of silver)!

Checking my handy-dandy S&D Greetings calendar I see we still have a few more available major holidays to discuss: President's Day, Groundhog Day, Memorial Day, Veterans Day, Labor Day, Columbus Day, Flag Day, Martin Luther King Day, Cindo de Mayo, Mother's Day and Father's Day. Obviously a lot of those won't be feasible but those are the most popular holidays I could think of. Any takers?

edit: Okay, I read thru those guesses again. They start in the middle of page 29 when I said "Wow, a new holiday" and end in the middle of page 31 when Paula said:

There were a lot of joke guesses, but of the serious ones, I think there is a short list of Easter, Valentines Day, and Thanksgiving.
