Coaster that surprised me in a good way: SFMW's new version of V2. Never rode it before the mods, but the ride is excellent in my current form. Most thought the mods would kill it, but I think it may be better than ever!

Since veryone else is listing surprisingly good coasters (despite the thread's title), I'll join in, too:
Viper: (SFGAm): Wow. I knew it would be good, but just, wow.
Mean Streak, 2nd ride: Enough rain to basically negate the trim brakes. Say what you will, there is an incredible ride lurking in that beautiful mountain of wood. It just rarely comes to the surface.
Magnum XL-200: Before I went to CP, I thought Raptor would probably become my new #1. How wrong I was...
JackRabbitt (Kennywood): Everything I had read about this ride said, "...And there's a double-dip that, no matter how much you ride it, always catches you by surprise." Well, advanced warning doesn't prepare you, either. Thankfully. :)
Deja Vu: Wow. This ride just blew me away. It was worth the two-hour+ wait, and that's saying something.

X - This was the biggest letdown I have ever had. I was so excited about this ride and had been anxiously waiting to ride it for over a year! Last week, I rode it and it just turned out to be rough and painful. I was on an inside seat in the front row.
Legend - Ok, someone tell me whats good about this ride cause I sure as hell don't know.
Nitro - Initially this ride was a let down, but after riding it more and more I began to really appreciate it!
Villain - What a great layout, too bad about the rough ride it gave me =(
The Beast - Ow ow ow!!! One of the top 10 woodies? I dont think so!
But there were some rides that truly blew me away!
Riddlers Revenge - I was not expecting anything out of th is ride but it was fast, fun and intense! Definately my favorite coaster at SFMM!
Wicked Twister - 1 word, WOW!
Volcano - After waiting an hour and a half, I wasnt expecting much but I found an extremely fun and fast ride that quickly shot onto my top 10.
Screechin Eagle - Airtime, airtime and more airtime! After 50 rides, this coaster secured its spot as my favorite wooden coaster.

You're at a party and see a beautiful woman. She walks up to you and says, "I hear you're fantastic in bed." -- That's Brand Recognition.
Xcelerator- It didn't do much for me the first time I rode it. However, I love it now; I guess it is one of those rides that grows on you.
California Screamin'- Same thing. It was a big let down the first time I rode it, but I love it now.
Talon- I won't go as far as to say that it was "forceless" but it was pretty tame.
Surprises:
Pheonix- You go down the first drop and you think "Where's the air?" then all of the sudden BOOM "Where did that come from!?". Now this is a stand up woodie.
Steel Force- A lot of people slam this coaster. They say it has been ruined by brakes so, they is hardly any airtime. While the mid-course was on very hard; I found plenty of airtime.
V2(Sfmw 2001)- Shuttle Coasters usally don't do anything for me, but this one did.
The terrain and layout are great, and it is fast and smooth, but it delievered zero airtime, and very few laterals.
I have no doubts I caught it on a bad day or time, but I can't enthuse about something that didn't do it for me, and I found nothing else of interest in the park either.
Shivering Timbers also disappointed me as well, although I did like the coaster, it just wasn't my number one like I thought it was going to be. Just another moody coaster I presume.
Having read that the Phoenix is moody, I now hope and pray that is as awesome next time I ride it as it was in 2001. I can't face the thought of it dropping out of my top 5 like the Beast did in 2002.

Apollo's Chariot @ BGW -- Maybe I got bad rides or something, but I found the ride to be lackluster and boring. I never got air.
Rebel Yell @ PKD -- It was way too rough. I don't know why I gave it a second ride. I was still in pain from the first run.
Son of Beast @ PKI -- The trains were painful, and the helixes beat me to hell.
LoCoSuMo @ IB -- Too rough for its own good, but I rode backwards and couldn't see anything well. Standard seating might help it a little.

First off, x flight was just slow and boring except for the loop. second off is son of beast....this ride was just flat out "PAINFULL".

2) Dueling Dragons: Average coasters at best, with the dueling action lost on all but the front row.
3) Roar (SFA): Was expecting alot (its a GCI afterall) but was left flat.

ANTICIPOINTMENT
Hulk: Good grief, people made it out to be the second coming (of Kumba :)). Seriously, there was nothing about the ride that struck me as "best" (save perhaps the location). The themeing was awful (ducks tomatoes), the launch was weak (compared to LIMs), and after the second vertical loop, I distinctly remember thinking that I could be reading a newspaper as the rest of the ride was so pedestrian. Overall, I think the ride is fun, but *not* top tier.
Jackrabbit GregLeg insists that it was because I sat near the front, but I never felt the double dip. Missed it. Maybe I was asleep.
Exterminator I didnt think there was much special about this mouse either. I liked the fact that it was in the dark. But we didnt get much spinning on the ride, and the "fire alarm" in the was annoying.
Titan Now this is pretty much my own fault but I thought any coaster that could have a opening sequence akin to Raging Bull and a PAIR of forceful helicies just *had* to be a top ten ride. I rode it, it was decent, but it had no pacing to it. With the midcourse cranked up to HALT!, the coaster was essentially two different rides that just happened to be joined together.
Rattler Majority opinion would say to set expectations to "low". I did that and was *still* bewildered at how much this ride really sucked. In actuallity, the *whole* ride isnt bad, but the undulating triple helix would be enough to make even The Legend suck. Not good at all.

SUPRISES
Hercules I think I have heard perhaps *one* other soul give this ride a good report in its current state. I on the other hand, *loved* the ride. The alleged "roughness" of the ride was nothing I couldnt handle (in fact, I barely noticed it). And I counted no less than *four* moments of good ejector air. But no one else has to like it, *I* do.
Alpengeist Everything that I saw about the ride screamed "A Bigger Raptor", which is not a good thing, IMO. But the cobra roll on the ride was so "snappy" and intense that I came off the ride impressed. Dont remember much about the 2nd half, but the cobra roll was enough for me.
Phantom's Revenge I hadnt heard *much* about the ride and just thought it would be mildly pleasing. But when I took that first ride, it felt just as fast as Millennium Force. And when we hit the double down (which I did not know was there) my eyes about popped out of my head. It demanded an immediate re-ride!
Mr Freeze And I must note this is pre lapbar conversion. I was expecting a horrendous headache but what I got was an intense, yet graceful ride forwards and backwards through the best looping element to date, the tophat (yes, I would choose this even over the kumbathingy). Backwards through the tophat in the backseat is everything good about coaster riding: Intensity, Airtime, Inversion, and Visuals. Have an ICE ride!

Mullholland Madness: Over-trimmed! The lateral section is not bad, but could be better. DCA should have went with a PSYCHO MOUSE!
Xcelerator: Over-hyped. I rode Xcel about a month after it opened and it was just... lacking. After riding over 40 times, the launch is weak but the top hat is still pretty fun.
Manhurtin' Express: OUCH! Looks can be deceiving...

Surprising:
GhostRider: I wasn't really into coasters at the time when I rode it, but I was in tears of joy (and fear) when I got off.
California Screamin': WOW! This ride is amazing! I never knew so much airtime could be found on a coaster! The launch was also more intense than I thought it would be. A very long ride, and my #2 coaster.
Speed The Ride: The launch is incredible and I wasn't expecting the second launch after the loop. Great airtime on the spike as well.

Surprising and Dissappointing at the same time:
Scream!: I was expecting too much but the it surprised me how much airtime this thing really has. The zero-G roll is the highlight of the ride and the first speed hill provides some wicked airtime. The bottom of the drop is a tad rough and most of the inversions (with the exception of the zero-G) are boring. The helix was not intense AT ALL!

Xperience The Xtreme
Villain- The size, and layout made me think it would be great, but it just didn't deliver at all. I have been told the ride hasn't been the same since they switched the trains.
S:ROS(SFA)- I had heard so many good things about the 3 S:ROS's, that I couldn't wait to get my first shot at one of them. But for some reason, I was just totally bored. Big dissapointment.
Batman:Dark Knight- I had already been on several floorless coasters, and enjoyed them all. This, though, was just horrible. I thought it was boring, and what some interpret to be "compact and intense", I just thought it was slow and weak.
Surprises-
S:ROS(SFNE)- Now I knew that this was a different layout, and the best of the 3, but after the SFA version, I was skeptical. But after riding, this just blew me away. Great speed, pacing, airtime, and I loved the misty tunnels. My #2 steel, behind MF!
Big Dipper(SFWOA)- Never heard anything about this coaster, and it didnt look like much. But it delivered some standing airtime, and was a lot of fun. Took 3 more rides afterwards.
Cyclone(SFNE)- Had heard a lot of bad things about this coaster, and how rough it was. Well, I thought that it was rough, but in a good way. It was fast,violent, and out of control, but never really painful, the way a woodie should be!

Twister at Knoebels - it just bores me. I've been everywhere on this ride, day and night, warm weather and cold, and it just doesn't do anything to excite me.
S:ROS at Darien Lake and SFA - They're just not as good as SFNE's version in any capacity, but I was just *expecting* goodness from an Intamin hyper.
MF at Cedar Point - Okay, the first ride was interesting, I guess. I mean, yeah, it's big. But, beyond that, there wasn't a single part of that ride that really stands out. It's almost like making something like Hersheypark's Trailblazer 300' tall, except I think I like Trailblazer more.
Raptor at Cedar Point - This was probably the most boring inverted coaster I've ridden. It lacked the intensity of every other invert I've ridden (B:TRx2, Talon, Dueling Dragons, Alpengeist, and Great Bear) and provided nothing interesting or better than any other similar rides.
