Why the hell would they try to stop a train that is already stopped? Isn't that going to cause serious rollbacks?

Yes, there are trims. Take a look at this picture.

Look all the way to the left. Those are trim breaks. Unless they are for the catwalk, which it doesn't look like that's the case.

Yes and no. The B&M dive machines use a chain to power their holding brake. The chain is simply stopped for three seconds and then released.
