Definitely the BBQ ribs and brisket at the Three Rivers Smokehouse, and fresh made waffle cones in the New France and Aquitane areas in BGW.

Hershey Parks sweet smell of fresh choclate when pullin up in the parkin lot. Actually a lot of choclate smells by the choclate factory.
Hershey cocoa, PKI's fountain in the morning, wood and chain grease at any park, and all of IOA.

The grease from the rides, the french fries stands, the ocean, the seagull infested sand, the cholrine from the waterparks and the suntan lotion of the Wildwood Boardwalk. Now THAT is summer!

The bakery smell that is piped out onto Mainstreet in Disney World. The strange smell of water at SFOG. The smell of asphalt on a hot summer's day and last but not least the smell of a fun house.
The B.O. of the weirdo in front of you that you get to smell for an hour while waiting for Dragster...
But seriously, my favorite park smell is from those hot cinnamon glazed pecans and almonds at CP during Halloweekends. If I smell those, I'm buying them!
Hersheypark smelled so good I could hardly string a coherent sentence together. My brain was overwhelmed by the chocolate smell.... ;)

The smell of grease and burning propane from the Tommy G. Robertson at SFStL. The first time I smell that during the day gets my blood flowing. Also, there's nothing quite like the smell of fresh vomit on a platform after some unsuspecting person has just gotten off your favorite ride. I'm sure some of the other ride ops on here can back me up on that one.
