I think even the mediocre woodies like High Roller are much better at night. They just seem to come alive and offer a lot more pop (air, laterals and speed).
For flats, I nominate Fireball at SCBB (KMG Afterburner, I think - similar to a Frisbee). The atmosphere of the park adds a lot at night (including the salty smell of the ocean), but mostly it is the unbelievable lighting package. When the ride kicks into INSANE mode the last 30 seconds and spins about 50% faster, the lights go hyperkinetic into a multi-hued strobe effect. Fantastic airtime and total sensory overload. The ride is very good during the day, but it is special at night.
Other versions of this ride (Knotts, Celebration City, Hersheypark, etc.) use a different ride program and the experience pales in comparison.

The best night flat ride is Condor at Six Flags La Ronde. La Ronde has lots of carny-style flat rides with lots of lights, which you can see from the top of Condor. You can look out at downtown Montreal, or look straight down and get dizzy as hell. :)
Favorite night-ride that is no more was Drop of Doom at Fantasyland (now called Galaxyland) in Edmonton. While it is an indoor amusement park, the top of DoD was inside a glass tower and you could look out over the city before the dramatic free-fall. FYI, DoD was identical to Demon Drop at CP. The indoor version was much scarier. (It was the only time I ever collapsed at the exit of any thrill ride.)
My most disappointing night-ride was Big Thunder Mountain Railroad at MK. Because our eyes adjusted to the darkness, the special effects in the tunnels were very weak - they looked like dirty styrofoam. Daytime rides were definitely more magical because in the dark tunnel, I could imagine the dirty styrofoam was actually falling rock.

Best Steel at night-Magnum, as said above cresting the 2nd hill you stare into the abysis that is lake erie.
Most Improved coaster at night-Big Bad Wolf, a unique and decent ride during the day this ride becomes amazing at night

Of the rides I've ridden, some that really stand out as incredible night rides include The Boss and Screamin' Eagle at SFSL, Mindbender and GASM at SFOG, Rattler at SFFT, Texas Giant at SFOT, Steel Eel at SWSA, Mega Zeph at SFNO, the Texas and Georgia Cyclones, the defunct MSAP Starliner and PB Zephyr, and just about any mine train coaster that travels through tunnels and dark woods.
I also love Arrow log flumes at night if they have a woodsy setting, and drop towers for the breathtaking view of the entire park at night.
I am looking forward to trying Rampage and Thunderhead at night, hopefully this year since they are more or less in my region.
