XFlight does have 3 trains, never been on it though so I don't know how many usually operate. Owned by SF my guess is probably 1.
Any coaster can run 4 trains if there are five blocks. That would sorta be pointless though because since it has a launch the ride is so short that 2 would be on brakes, one in the bowl, and one in the station. Think about it. Most currently ran is 2 I believe on rides like Flight of Fear, Poltergiest, and Jokers Jinx.

No, they cannot, at most, they can run 2 trains. The launch bowl, and first set of brakes is 1 block, the station is another block, and the second set of brakes, before the station is another block. Total, is 3 blocks, and another train cannot be launched until the other train is on the brakes before the station.
Some parks order extra trains, in case a train has a problem, in which the park can take another train, and add it, and remove the defective train, inorder to keep the capacity the normal PPH.

FOF can in fact run four trains. Station one to Mid Course is one block.
Mid Course to Brakes is two block. Unload station is Three.
A block between stations is four and load station is five I belive .
Anyway it is possible to have one train loading one on the second half of the bowl. One unloading and one between the stations.

If it weren't for the restraints, Flight of Fear most certainly could run four trains. Remember, it has a seperate unload station. Granted, I could promise you that a train would almost end up sitting on the standby brakes uptrack of unload, but it could certainly be done.

In theory the Vekomas can run 3 trains. In practice the load time even with a good crew will always be long enough that it just won't be practical. You might be able to run 3 trains for ERT with a group of ACER's who have all ridden a Vekoma Flyer before, but that's not the crowd that you are going to have during normal operations.
The spaghetti bowls come in 2 distinct designs. The FOF's have mid course brakes and dual stations. The outdoor bowls have no midcourse brakes and a single station. The outdoor bowls are limited to 2 trains. I don't know enough about the blocking of the indoor bowls to be sure how many they can run.
