Here are my picks:
SFMM, SFWoA, SFOT, SFGAm, SFOG
However, I wouldn't be surprised to see SF Holland in there because I remember hearing there would be parks from all over the world.
There are some parks that will definitly not be there like SFEG and SFKK. They are too small and with the larger maps...
My thoughts and conslusions:
SFMM - 100%
SFOT - 95% - Titan was mentioned as one of the 25 coasters you could build.
SFWOA - 10% - They would need to add stadiums, wildlife, and a water park.
SFMW - 10% - too much wildlife and shows.
SFGAm - 90% - one of the top SF's parks. All of the coasters could be built. No water park.
SFGAdv - 90% - The most visited Six Flags park. Big park, good coasters. Water park and safari are separate.
SFOG - 85% - All that is needed is a B&M Flyer, and since one is at Alton Towers, and Chris is from the UK, I think there'll be one. No water park.
SFNE , SFSTL, SFA - these could possibly be included as they contain some good rides, but they all include a free water park.
SFKK, SFAW, SFEG - not regarded as good parks, would Six Flags want these in the game?
I haven't been to the other parks so I cannot comment, but I think SFMM, SFOT, SFOG, SFGam, and SFGAdv. Or possibly a European park.

Thant only leaves one slot open and I think the prevailing thought would be (if its an American park) either SFGAm or SFGAdv. I'm going to have to say that it will be Great America only because Great Adventure has too many different flat rides and I dont see a "Houdini" type ride making it into the game (though I'd LOVE it if I was wrong on this point).
But that's my opinion just based on the gaming aspect not the merit of the parks themselves

2Hostyl: Great idea! Even though I doubt they'd include SFFT, it would be pretty awesome to see. Rattler, S:KC, and Poltergeist would be awesome to see on the game.
I'm pretty sure of SFoT and SFMM- other than that, I don't know.
The parks have kind of been announced. The preorder link for EB has a box shot and the list of Six Flags parks in the game. I have a feeling some people are going to be disappointed.

It makes sense... I mean, if they only liscenced 25 coasters, MM uses more than 1/2 of them. (Of course, that makes no sense whatsoever...)
And the European parks are nothing to laugh at anyway.
Think about the SFMM creation we're seeing. I bet someone around here will come up with better recreations within the first month or two of release. Nothing against Sawyer and his group, but there are a lot of anal-retentive designers around here. ;)
