While supervising Wildcat at Hersheypark, I used to let my ride ops hop on the last train with the guests and send it around a few times. Not really legal as it is a "two operator ride."
All you have to do is take a lap bar release tool and thread it through the holes in the dispatch button sheath. This held the button down while I went and pressed the other dispatch button. ;-)Kinda funny, if you did that on both dispatch buttons, the ride would just keep dispatching trains. Of course, we never did that!
About four years ago 5 of my friends and I got to ride shockwave(sfgam) 25 times in a row. I puked on the counter of the on ride photo stall.

I almost always try on the beast but most of the time its the last ride on saturday night and the workers are all ready to go home. I don't blame them either considering they are the best crew in the park and they work hard all day. There was also a time when this one ride op asked if we wanted to go again and everyone cheered and then she was like come back tommorow at 10 then. I thought it was kind of mean but then again kind of funny

I managed 2 consecutive rides on Nemesis earlier this year, It was right at the end of the day when the park was due to close and I was on one of the last rides of the day, anyway when we came back into the station we saw there was still a few people waiting for a ride but obviously not enough to fill a whole train, so Me and a couple of other friends very nicely asked if we could stay on for an extra ride, and the ride Op allowed us.
This actually shocked us all, because Alton Towers actually have a very strict rule that no one stays on any ride at the park, not even if its at the end of the day, or if there is no queue. So we were quite delighted when this ride op allowed us to stay on, of course there was no way we were gonna say no :)
I have also managed to stay on Ramesis Revenge at Chessington(Top Spin) for a further 2 Extra Rides at the end of the day, that was excellent, and the staff put it on Absolutly insane Setting ;)
Also Managed what you could call a Mini ERS on Monte at Knotts Berry Farm earlier this year. Although it was'nt actually at the end of the day, the park was really quiet, and when I was on the ride, there was absolutly no one in the queue, so the Guy operating the ride said that you could stay on for AS LONG AS YOU WISH just as long as no one came on wanting to go on your row, so there I am on the ride with only a select few people(About 6 other people I would say) taking about 5-6 rides non stop, It was amazing, I could have easily stayed on for more, but I had enough at that point, GREAT FUN.
Blue Streak - Cedar Point (there was no line)
Mantis - Cedar Point (again, no line at all)
Raging Bull - Six Flags Great America (BIG line; ride got stuck though)
Shockwave x6 - Six Flags Great America (no line)
American Eagle - SFGA (no line)
Viper - SFGA (ride got stuck)
Demon x4 - SFGA (no line, ever...)
Magnum - Cedar Point (rainy, no line)
That concludes my list. I have been to other parks but these are my two most frequent stops (live in chicago). No joke on any of these. I've been very lucky in my "one more time" chants. Many a time have I attempted but failed to get another ride. Depends on the day i guess. The Cedar Points were either rainy days or late at night. Same with Six Flags.

To: the ride ops who do this for us: WE LOVE YOU GUYS! Seriously, it is appreciated more than you can know and I'm willing to wager that the gift shops nearby see a *spike* in sales immediately afterwards...when I have a GREAT time at a park/on a ride, I'm much more likely to pick up some "merchandise" to show my appreciation....I don't think I'm the only one here.....
edit: to the parks that allow "doubles" at closing or on empty rides: ditto. The impact of going the "extra mile" to make customers happy WAY outstrips the negative impact on employees, IF they're *happy* employees to start with....;)

Sea Dragon at Wyndot Lake on a cold drizzly day in August last year. The park was dead and a friend and I rode for over an hour without getting off.

215 different coasters since May 3rd, 2002 and counting!
Now that it's SFNE, it never works, no matter how empty the train is. I've also had empty trains on B:TDK that we had to walk around to re-ride. I don't blame the ride-ops, though. I'm sure they get in a lot of trouble if the mgmt. finds out now that it's a SF park.
