A few answers:
You must be 16 years old to work in the rides (operations) department. If you're that old, I'd encourage you to come out to the park to see about a job, sounds like you'd make a good addition to the park!
About riding -- If you're a Rides Lead (in charge of a particular ride) you test ride in the morning and once during the day. If you're just a Rides Host or Hostess, you cannot ride unless you get permission from a supervisor. There are many employee days throughout the year where park staff gets to ride the rides until 1am. Those are great fun.
So that's about it, if you're old enough, call the park to see about getting a job there!
