If you want to stop something moving really fast just use a strobe. (Which most ride photos do) Even a cheap automatic strobe from the local camera shop can shorten the exposure time to 1/100,000 of a second or so) 50 years ago Harold Edgerton was using fast strobes to stop a bullet in flight going 10 times as fast as any coaster.
Wanna hear something crazy... There are coasters all over the world without on-ride photos...
