Deffinatly the phantoms revenge going up the lift hill, the sound a wooden coaster makes when traveling at great speeds, and the B&M roar of thier coasters.
I love the sound of people trying to mutter "move I have to puke" with half a mouth full of vomit and they can only get out "moo i hap t pppuu-bwaaawwck". :) God I love that... ;)
As far as the rides themselves...hehehe, gotta love the creak of woodies as you hurl around the helix on an out-and-back. Shivering Timbers anyone??? Anyone...? :)

I, personally would DEFINATELY have to say the sound of the LIM's launch for Superman at Six Flags Worlds of Adventure.
That is just something I cannot get tired of nor find annoying... just genius! (even if it wasn't intended).

Lift hills: The sounds of a PTC train climbing a lift hill is a great nostalgic sound. A great noisy Arrow lift hill also reminds me of summer. I personally think B&M lifts are too quiet (except for inverteds, which are really loud for some reason). And then there's the sound of MF's lift........
Roars: The roar of a woodie, especially a fast, powerful one, always pumps me up for the impending ride. Villain, Cornball, and the Mean Streak (even though the ride is a huge disappointment) come to mind here. B&M's trademark roar is also great. I have not yet ridden one of their coasters with sand-filled supports--the lack of sound will probably be eerie.
Brakes: I love the sound of the rapid-fire brakes on Arrow coasters. The ending brakes on Phantom's Revenge and the mid-courses on Shockwave and GASM are great examples. Intamin's magnetic brakes have a neat futuristic sound, also.

I can't think of a good signature.
The ring of the bell and the brakes lowering on the dispatch of the Racer. The jet engine sound of SP and PR as it flies through the circuit. Double dip of the Rabbit. The scream of the LIMs on S:UE.

My least fav. sound: The silenced B&M's. Even though it's amazing that they could silence the coasters so much, I do like to hear the roar of the train from places more than 10 ft. from the track. (unless it's B:TR style where you can't hear yourself think anywhere near the coaster, ever)

The B&M roar is easly my favorite park sound at this time. Others have listed many more I enjoy. The sound of a train passing through a magnetic braking system is a good one also. The Intamin Drop towers provide a similar sound also.
I love all the small little sounds also. Things like the harness release hiss on the B&M inverteds

The small little hisses the GCI brakes make on Lightning Racer.
The first time I heard the lift hill for X, I began to smile. It kind of had that classic Arrow lift sound, but much bolder. The sounds the train makes while it is doing it's gyrations is awesome also.
I also love the lauch sound of Superman: The Escape as well as the final braking sound.
