I second Soggy's thread on Shivering Timbers.

Shivering Timbers is a "World Class" coaster.
(one that is worth the trip from anywhere)

If you haven't been on ST, get to Michigan's Adventure. It's not a big park, but it does have ST and is a lot of fun.

Adendum. Kumba and any other sitdown featuring B&M's zero-g roll will have several secconds of sustained floater air. Volcano@PKD also features the same floater air through the barrel rolls. For a wooden coaster with sustained air, The WildOne@SFA features extreme ejector air on the first full hill coming back from the turnaround.

God, the list could go on and on...basically anything CCI has insane airtime. BUT, the one woodie that scared me more than any other was...

Georgia Cyclone!

That thing had like 3 scare-the-living-crap-outta-you drops!
I can't imagine a ride existing with more airtime than Georgia Cyclone. My restraint could not go farther than a foot up from my lap and the seatbelt I had on didn't help either. I flew so high in the air that my butt was on the dividing bar between the seats. If I had released the seatbelt, I would have surely switched seats and probably died. That was terrifying but fun!
Another awesome woodie with the ejector airtime your looking for was Americana's Screeching Eagle. Small ride, but with incredible ejector airtime on every hill! I was so much more impressed with this ride than anything at PKI! If Americana does open next spring, you gotta make your way out there to experience this unbelievable classic woodie.

As far as steel, like I posted before about this subject, SFOT's Shockwave is an incredible ejector airtime machine. Swartzkopf gem, no shoulder harnesses, just a lap bar, you get the full ejector airtime effect on every one of it's numerous straight flat drops.

Nessie also has some great airtime for a steel coaster.
Let me second that - Screechin' Eagle's airtime doesn't even really fit into the "floater" or "ejector" categories - it's more like "insane" or "My God - the train is still on the tracks?" airtime. For "normal" airtime, my fave is the Phoenix, although the first drop from the back seat on Rampage is the best sustained ejector air I've ever felt.
