Can't speak for Great Adventure, but last year a friend and I went to Kings Island on Labor Day. We went ahead and sprang for FL+ and half the rides it was worth it and for the other half it didn't matter. It was overall pretty mild.
We're going again this year.
Reckon it's a holiday, but usually people have things at home. Not like Mem Day, but some. Plus it's a school night.
What's nuts is to go at Halloween. But that's just me...
I went to Great Adventure on Labor Day around 5 years ago, it wasn't empty but not too crowded either. The major coasters had 30 minute waits. Halloween night itself should be empty, I went on Halloween in 2014 and it was walk ons to 5 minute waits all night and that was a Friday night. This year with it on a Monday I would expect the same with most people probably going for the terror trails.
Two years ago a riding buddy and I went to SFGAD on Labor Day and it was so dead that every coaster, including Kingda Ka, was a walk-on. I recall that we had about 18 rides on various coasters in a 4-hour period. Plus they had a promotion for season passes that ended on Labor Day so we went in together (cheaper to buy 2) and it cost us $66 each for a gold pass with parking. (The park actually tends to run the same promotion around Christmastime so we needn't have rushed to cash in on it.) On the other hand, last year on Labor Day I was at Lagoon and while it wasn't extremely crowded, there was a about a 40-min. wait for Cannibal and about a 30-min. wait for Wicked.

In my general experience, Labor Day is usually medium to light crowds. As mentioned above, I think everyone assumes it will be crowded and has a bunch of other stuff to do with family. July 4th, Easter, Memorial Day, etc. all turn out to be reasonable days in spite of what you might initially think.

The only park I've ever been to that is crazy on holiday weekends is Carowinds. I don't get it either. Every other park I've never had problems with.
Carowinds on Labor Day Monday really isn't bad but the weekend I avoid.
