That's the way I do it and it works well for me, so perhaps you could try that?
If you do use someones park you will lose all the rides but you'll have a decent work bench to start from.
One thing you may not have thought to try is using the "load landscape" option in the scenario editor. You can import the landscape and scenery from any scenario, saved game, etc. There are several in-game scenarios that have decent landscapes in my opinion.
Once it is in the editor, you can do whatever you want with it, including changing the size, although you have to keep in mind that the park will expand "towards" you and shrink "away" from you, so you may have to rotate the landscape to change the size in the way you want. I don't know if I explained that clearly enough, but if not, I'm sure you'll figure it out on your own. Hope this helps.
