Go west, young man! (or South)
California, Vegas, Florida, and probably Texas are ones I can think of.

USF/IoA and Disney, as well as Boomers, (FL parks) have a year-round schedule. Wild Adventures is weekends-only in the Winter (CoasterDad64 gets a gold star for mentioning WA!), as is SFMM I think. Disney and Knotts in CA are year-round, as are all the Vegas coasters.
I may be wrong on the CA parks....some SoCal buzzer will be sure and *correct* me though...just be gentle, lol...;)
Actually, WA is open Thursday thru Sunday in January and February. The operating schedule is here: http://www.wild-adventure.com/calendar.asp.

Revised projection for 2002: 33 parks & 120 coasters. 33 & 120 through 10/17.

PS: You can get cheap tickets to KBF by buying them where listed on the whats hot (or whats new) link on their website. Expect to save 50% per ticket. Also, their hotel is a great deal if you end up going to SO. Cal. And unlike the greedy disney, they offer shuttles to Disneyland (since they don't expect people to stay at the resort for more than 2 days, that would drive you nuts). Its something like $89 or $99 when available, but its a really nice hotel with good amenities such as the pool, exercise room, etc.
Well, knotts has updated their website now, just in the knick of time:
