I would think your best bet would be the 80/90 turnpike east to 250.
Staying at the point itself (Breakers/Sandcastle/Lighthouse Point) is a bit expensive but well worth the money because you can head back to your room for a break. Breakers Express at the end of the causeway is cheaper, nice rooms, and still relatively convenient. The other advantage is early entrance to the park if you are a hotel guest.
If you want to stay in Sandusky, I've stayed in a few places that I've enjoyed. The Fairfield Inn in Sandusky was nice, as well as the Red Roof Inn. Hubby and I stayed at the Red Roof this week. Of course it's off season, but our room with 2 doubles was only $45!
You can pretty much hit all the rides in one day, even on a really busy day, at least once. As I said above, if you stay at a CP hotel, you get the 30 minute head start for MF and WT. So with two days, I think you'll get duplicate rides. You may want to catch some of the shows, and the two day ride n slide ticket also gets you into Soak City.
As for cheap places to eat inside the park...I don't think that exists for ANY amusement park on the scale of CP. The best bargain is the Midway Market's all you can eat buffet for $10.
