Temperature and humidity have a HUGE effect on how a rollercoaster runs. The usuall affect of temperature is speed variation. Most coasters use a mid point brake run to adjust the speed to that of "NORMAL" operation. But if it is slower than normal, it stays slower. Rides that rely on hydraulics(suspendeds) cannot operate if too cold outside. Some rides close during rainy weather, and most all of the tall steel rides will shut down if lightening is spotted. Wind will also affect coasters, and high rides will be halted during high winds. The weather effect is what makes a ride one day seem slightly differnt than another day.
