Every company is different, and it depends entirely on what demographics they want to serve. Look at Cedar Point's last few years, for example. One year they build Camp Snoopy and Woodstock Express, because families collectively spend more money on admission, food, etc. It's a good business decision.
Then they'll build big rides like Millennium Force or Power Tower because they capture the imaginations of the thrill seekers.
Good business to me is just making sure you have all of your bases covered and you're serving a wide variety of guests.
