First of all, the inverted mouse in RCT is based on the one made by Reverchon. It features a single car with four-across seating and hairpin turns like those found on a regular mouse. Check out their (newly revamped) website for photos.
The extreme version of the ArrowBATic is nothing like an inverted mouse. It features a single car with two rows: two seats in the front, and three in the back. The height of the ride, if I remember right, is close to 200 feet, and, as stated above, there is a 90º drop. There are four definite inversions: 2 heartline rolls and heart-shaped element (I forget the name) that is pretty much an inverted sea-serpent (like on Medusa West). There is also a curve after the first drop that I would consider a fifth inversion: it's kind of hard to explain, but it's almost an inverted tophat, only not as tall and more gradual. I can see people arguing about it, but it certainly looks like an inversion to me. There are no hairpin turns on the extreme version.
I don't have any pics of the family version, but I don't think there were any inversions on it. I think it did have some hairpins, but I'm not positive.
Remember that these are only possible layouts. If a park wanted to build one, I'm sure they could get a custom design. Personally, I'm keeping my fingers crossed that some park hurries up and builds one of these things. I'm dying to try it!
