So I have a week of vacation that I am required to take before mid-June. I haven't been to CP in 25 years and I remember hearing that early season is generally not crowded, but it also has a lot of early season troubles (ride closures, understaffing, etc.)
Is there a sweet spot sometime in May or early June where the crowds are still low, but everything is open and running?

I'd say a Monday-Thursday weekday during early June. Most of the early season kinks will hopefully be worked out by then, staffing should be at or nearing its peak, weather has usually turned the corner, etc. The only thing you might not get a full dose of is Live Entertainment as some of the shows have short runs and haven't started quite yet, but there should be more than the first few weeks of the season. Oh - and if you want night rides, you might want to go a weekday in the second half of June because the early June weekdays are 8PM closings. But the reason for that is lower crowds.
It's been my experience that the six or so weeks from the beginning of July through the second week of August are by far the busiest, on average.

College students will start trickling in the week of May 18th and onward to help improve the staffing situation. Something to keep in mind: early season now has a lot of school groups and the sports teams playing at Sports Center coming to the park, typically they load up buses to leave by 5-6pm. It’s nice on Friday evenings (May 22nd and 29th) once the groups leave and the park is less chaotic with kids and is open until 10pm.
I would second the suggestion of a Monday-Thursday in early June. Mid-May to late-June is our sweet spot to get in a lot of rides with low crowds. Schools are out, so no school field trips, and most of the summer visitors are still gearing up for visits. The only caution would be bugs (midges) are plentiful. Hands up, mouth closed.
So I settled on the afternoon of 5/30 (Sat.) and all day 5/31 (Sun.)
Any thoughts on how to tackle the park? I plan on staying 'til close on Sat. and then arriving before opening on Sun. Is there early entry still? Are prestige passholders from other parks eligible? How do I make the most of it?

So far this season, Saturdays have been packed and Sundays have been light.
If you're seeking multiple rides on the top attractions, then Fast Lane is mandatory.
I'm pretty sure that with Prestige, you get early entry, preferred parking, and VIP lounge access at all parks.
That was my experience using my CP pass during my 2-day visit to KI last week.
Since it's been awhile, the old strategy of starting in the back of the park early still works. Unless we have Fast Lane, early in the day is usually the only time when Maverick's line is tolerable. It will likely be the longest wait in the park. We seem to consistently get good re-rides in the back of the park in the early hours.
Early reports on ride-ops are not good, even for early-season. I hope you have a good experience.
Our first visit will be in mid-June.

^^ That reminds me; for some reason, they give me two single-use Fast Lane+ passes per visit.
At first I thought it was a mistake, but on my third visit, I questioned the clerk. While she wasn't sure why it happens, she mentioned she'd seen guests get up to four per visit. Since I already have All-Season Fast Lane+, I just give them away.

Since you have early entry, (and this is assuming the rides are actually open during that time) I would start with Millennium, then Siren's Curse, and curl around to Top Thrill 2 as the hour ends. Then you're in a great position to keep heading to the back of the park to be near Maverick and Steel Vengeance as the park opens to all the non-prestigious folks, and a bite to eat at Farmhouse.
I'm not sure what your dining habits are, but there are 4 of us, and we usually get two all-day dining bands. That's a new meal every 90 minutes, and it's more than enough food for us; you can get one of those bands at the checkout of any of the major dining locations.
After that it's really hit or miss depending on the crowds and what you're interested in, but at least you can just soak it all in knowing you're doing FL+ the next day.
As odd as it might sound, we have found that TT2 has one of the shortest FL+ lines in the park, almost to walk-on status a lot of days. Maverick and Siren's Curse "normal" queues can really, really crawl, especially SC.
I know this is true of most rides (as they are difference experiences), but Siren's Curse in the dark is something else, especially with the lighting/effects, specifically the "tunnel" with the fog.

Thanks for the tip. Sadly on Saturday, the hard way day, I am arriving mid-day, having driven from SFGAm. that morning. I do have season dining attached to my pass, though.

This is usually the way we start our annual extended stay (dropping in mid-day on a Saturday). I mean you never know when you might hit a day with low crowds, but what we like to do on days like that is to focus on smaller rides and attractions that wouldn't be impacted too much by FL+. If you just spawn in during a busy Saturday there is no plan other than just to relax and make the most of whatever you can.
