i would have to say thursday. All the rides should be open and the park will be prepping for the weekend.
When I worked at CP, Sunday was the best day. Everything was open, but crowds were significantly lighter than Saturday.
Mid week for me Tuesday-Thursday. Weekends are usually the worst for crowds. Monday and Friday people take off to have an extra day for the weekend, so they can be crowed but not as bad as the weekend. That's my opinion anyway.

Any day during the week is great. Tuesday, Wednesday, and Thursday tend to be the best. It all depends on the park and time of the year.
Tuesday through Thursday
except for special events and if you happen to hit PKI on the day they've sold the park out to several large groups. (June 4th after driving from Michigan's Adventure, luckily able to add a day to our vacation and went in on the 5th.)
It never occurred to me that PKI would sell out on a Sunday, and I didn't check before setting out on our 4 park trip, my mistake.
