Where Can I Get Old Parts From Coasters? Such as harnesses wheels etc.
Realistically, nowhere usually.  Wheels are reused.  If you're REALLY lucky, once in a blue moon a park will auction something like a lap bar at an event.

LOL! That's funny B&R. I have wondered this as well, and know of auctions and raffles that are held occasionally at park event. It pays to be in a coaster club! I too have wanted something like an Arrow wheel, but so far I will have to settle for my Legend lap bar! It's great when they let the enthusiasts collect things and donate to good causes at the same time. Thanx HW!

If it counts, a CP lightpost was for sale a while back.
Old ride parts are either rebuilt, or destroyed. The latter is because the insurance underwriters and the parks don't want them falling into someones hands who could possibly mis-use them.
