At Kennywood, roasted corn; buffalo chicken strips and fries with cheese and gravy (and buffalo sauce that runs down off the chicken); funnel cake; Dip Cone (not necessarily all in the same visit, mind you...)
At Cedar Point, usually elephant ears and a sit-down meal at Macaroni's and/or Coasters, other stuff varies (this weekend we ate at Macaroni's, but also at TGIF's in the Breakers and at Johnny Rockets).
Knoebels' is the true eating festival. Cheese on a stick; Rib-B-Que; pizza; birch beer; potato cakes; chicken pretzel...
Great Adventure this year brought me Sabrett's and Nathan's hot dogs, which I hope will be there every time I go in the future (and yes, I ate one of each in the same day -- living in Pittsburgh it's almost impossible to find Sabrett's, which I grew up on, but Nathan's are too good to pass on as well.)
Coney Island, of course, Nathan's, and whatever street vendor type thing catches my eye while walking around.
At other random parks, it varies, but frequently I'll have something on the order of chicken strips and fries. I look for elephant ears and funnel cake a lot, but some places have stuff like that premade and just reheat it, which I find nasty.
