That happens to be the first long weekend of our summer.(Victoria Day) If the weather is nice I would expect some pretty large crowds. There will be fireworks on the Sunday night May 19. Have no fear with that amout of time at the park you will have no problem doing everything you wanted to do. Even on the busisest days your max average wait rarely exceeds 45 minutes. Wonderland has 12 coaster and many flat rides to handle the large crowds.
