I lost my hat on Poison Ivy. How pathetic.
If it is very high, you might need to make it as high as you can before you go off the screen and then click additional pieces on top while still holding the shift button. Another thing you might try is just draging the pointer really slow so you don't move it as much for each section. Personally, I have a trackball, so I don't have to worry about desktop space limitations.

Actually there's an easier way to do it than shift+drag...
With scenery selected, hold Ctrl+click on the top most coaster piece. With Ctrl still pressed, press shift and stack/drop the scenery until you're satisfied. Voila!
