The Sahara is moving to evict the NASCAR Cafe from its Strip-front property, but the roller-coaster operator is fighting back. The 1,750-room hotel notified the roller coaster and restaurant operator, Dyer Ventures that it wants the property vacated by Monday. Gordon Gaming Corp., holding company for the 51-year-old Sahara, wrote Dyer on April 22 outlining nonmonetary defaults in the property's 25-year lease.
The Sahara updated its facade and built the restaurant and Speed: The Ride coaster in 2000.

To remove racecar themeing, just redo the car shells. I don't understan what all the hullabaloo is about.

The 7,600-square-foot restaurant is the second “small box” NASCAR Cafe for the Knoxville-based chain operated by H&C Racing Inc. With larger versions in Sevierville, Las Vegas, Orlando, Fla., and the original location in Myrtle Beach, S.C., the company opened a small box in Greensboro, N.C., another area with NASCAR bonds, in April.
H&C Racing uses the name “NASCAR Cafe” under exclusive license from the National Association for Stock Car Auto Racing. The Johnson City location employs about 120 people.

There is no mystery here... I would think it's as simple as the hotel wanting all of the operating profit from the cafe, store and ride instead of a portion of it.
