There are various flat tiles and slanted roof tiles under the walls tab that you can use. Just use the stacking procedures using the shift key to get them into place. Then play around with em a bit and practice. I have only played one scenario thus far because I have been having more fun putting together coasters and building stations and scenery for them.

I hear ya, Kick the Sky... I keep wanting "corner" pieces too, so I can completely cover paths, not just the 'straight parts', and have it look good. Among other things.
And has anyone else noticed that there seem to be duplicate pices of some items? In particular, two base tiles (or roofs) that look exactly identical... you really notice this in the "Advanced" object selection in the scenereo editor. There's a lot of duplication and unnecessary items using up the precious object count...
