So, I think Tsugaru heavy has probably the most fun step chart in the game. It's separated into some pretty distinct parts:
Part 1: The pause. Only song I know of that has a pause or stop before the arrows even start.
Part 2: Two-step. The steps begin with focus on two arrows at a time, and lots of "two-in-a-row" steps..... think the beginning of Luv to Me heavy.
Part 3: Loooong freeze.
Part 4: Easy gallops.
Part 5: Hard gallops. Does any other song of this speed have 32nd notes? These are so much fun to do. Almost like a jump that's a little off.
Part 6: Cross-overs. This section became much easier since I learned how to center one foot on the up or down arrow and cross from left to right to left with the other foot. If you're double-stepping, this section is very hard.
Part 7: This is where it all comes together. It tests all the other skills you learned during the song, with gallops quickly switching to eighth-notes, cross-overs and jumps.
Part 8: Slowing down... the song winds down to about 90bpm with some fun freezes.
Not to mention, Tsugaru is one of a handful of songs that are just about as fun in standard as in heavy. It still has a lot of gallops, and the slow freeze at the end requires a cross-over a la Afronova.

My favorite step pattern has to be probably either Exotic Ethnic (which i had just recently beat), Paranoia Survivor (which i have yet to beat, but i have the step chart) or um, let's see...Trip Machine Survivor.
Ok Exotic Ethnic:
...plain and simple...if you don't like crossovers or can't double step at 190 bpm...please...spare yourself the agony and don't try this song, because crossovers are all you're gonna get from beginning to end. lol There's no two ways about it. It's just long crossover streams and a few simple freezes in the middle (which also require you to crossover, heh go figure) Yup, great stuff (since i love crossovers)

Paranoia Survivor:
Fast, fast, fast...with lots of starts and stops off the 8th note. I love the 3 slowdowns within the first half of the song. You never know when they'll happen, then when you think u have time to catch your breath, the song says "I don't think so!" and gets right back up to 270 bpm. Stay on your toes or you'll get smoked...
Fun Factor: N/A (i haven't beaten it yet =P)
Trip Machine:
Another nice pattern. There isn't much stream in this song, but many starts and stops (more than Para Survivor). There's a few sudden gallops in the song which is pretty cool as well.
Fun Factor: 8

I play Double Single Standard at the moment and like crossovers, gallops and slides for singles, there are some steps especially needed to play double.
