Head down to the Eastern Mojave Preserve (CA) and check out Devil's Playground and Kelso dunes before heading back towards Vegas and a nice little sunset stop at Bills. It's a lot of fun...believe me!
I think it comes down to your schedule. The drive isn't far at all. Is it worth it to take a little time out of your 3 days to make it a stop? Will this be a 'once in a lifetime' trip or will you be back in Vegas in a year or two?
Well my fiance has been there at least once every year the last couple years, this will be my first time, I want to ride the rides while she goes and gambles. Also, gotta hit M & M World (she said I will like that) so I guess for me it is a once in a lifetime trip but for her it is the yearly trip.

Then again, some of those holes-in-the-walls are a bit scary. But nothing that a nice shot of pepto wouldn't cure.
So both times I've been there, most of the time we ate at food courts or fast food places.

And a $3.00 burrito that does the same is better no? I think the price has everything to do with lack of competition. My buddy just moved to Seattle where the average price for a burrito is $6. Down here, where Mexican food joints are literally on every corner, you get 2 burritos of better quality for that price.
Then again, there are some parts of the country for which Taco Bell (Taco Time etc.) is the only available Mexicoid food. At least Chipotle is offering something a little closer to the truth. They also use very good ingredients and their restaurants have a nice design to them.
I think it is a foot in the door. Keep in mind that my grandparents, who grew up in Southern California, said that eating Mexican food was a very rare thing when they were kids.
Now all we need is to have Knott's set up a roach coach in Fiesta Village. ;)

And for all the good Mexican food in SoCal, the one restaurant I'd really like to get one of here is....Zankou Chicken. We HAVE decent enough Mexican places, but there's nothing LIKE that place to be found....
Oh, and as far as Vegas food and such, etc., go with a *gambler* and the GOOD buffets all get comped...;)
