Adventuredome - Depending on how much time you have, you can hit the inverter, chaos, and the canyon blaster. The blaster is a good coaster, and it packs a punch for its small size. This is closer to the main resorts, so it might be more accessable.
Sahara - This has Speed, which (was) by far the smoothest premier coaster. Its a greeat ride, and its by far the best in vegas. If you have time, you may want to go visit that big tower next door and ride that cool contraption on top. The thing about sahara is that it's farther down, so you'll have to take a taxi or bus.
Dont waist your time on Manhattan Express. Its $10 for one ride, and the lines can get long. Besides the fact that its a Togo, this coaster has nothing great to offer, except the heartline loop thing.

Seriously though, Speed:TR is a must do. Big Shot, likewise. Adventuredome is good, but its been a while since I have ridden their rides. (Inverter is one of my favorites too) Manhattan Express isn't THAT bad, but the price is way too high for only one ride.
I always hit Desperado, but then again, I always drive right past it on my way in from the LA area.

Manhattan Express- I don't know what you guys are talking about. This ride is one of the roughest things in the west- its great! Although it dellivers no airtime, i have to agree with everyone that the heartline twist-and-dive is fun, and your upside down for a while. The bad thing is the otsr's, they used to push them down so hard that you were slouching in your seat. Now, they will let you leave it about 1-1/2 inches above your shoulders. Remeber, you can reride at the exit for $5, and after this, its the same as riding Canyon Blaster 3 times. I'd rather ride this.
Canyon Blaster- Ummm... leseee... i've been on this ride 40+ times, and i'm generally sick of it, and will only go on it if one of our guests wants to go there. The shoot-the-chutes ride doesn't get you very wet. Inverter hurts your thighs. Chaos is the best ride there... but you'll probably get sick of that, too.
High Roller- Don't even think about it. Don't even waste your time. Don't waste your money, don't go on it! Its basically a kiddy coaster on top of a tower, and you can't even see over the edge! Big Shot, on the other hand, although not very tall, is still good, provides airtime, and a great view of the city (I can see my house from there, and that's a while away from "down there"!).
Speed- great coaster, great value. $8 for 2 rides. $12 for an all-day pass! WOW! Ok, very good, lots of hangtime, fun fun fun. And if your lucky, you'll sit in Britney Spears' seat!
Wet'n'wild- This is fun...lines get long, though! You might want to go when Bomb bay is open... it's a little steep on admission, too! the season pass, $50, pays itself off after 2 times!
MGM Grand Adventures- CLOSED. Only opened to business parties and such with i thnk 5,000+ people.
Star Trek: The Experience- Fun, cost as much as it does ot get into wet'n'wild though. VERY expensive, but it provides a full history of Space Trek along the queue, and has a fun elevator effect. The screen is all around the car, so you can see the images even out of the little windows on the walls... very rare. You might even encounter an alien while walking thorugh the restaurant area, too!
