Where did you look up this definition? I think it is terrible (Or at best very situation specific). The state of being upside-down is always relative to the "normal" rider position of a given ride(your upside is down and your downside is up... it has nothing to do with your head or feet). Since the "normal" rider position of the Flying Dutchman is face-down, then upside-down is face-up. (Or if you want to argue that the normal position of the ride is on your back because you start that way, then upside-down is when the train turns over at the top of the lift and all other points where you are in the prone position) Since both layouts of the flying dutchman (Stealth and X-Flight/Batwing) turn your over so that you are in an opposite position relative to the "normal" riding position (whether you believe that this is face up or face down), they do indeed go upside-down.
