I thought of two. For a Spain theme, you could call a coaster El Ejecutarse De los Toros (Running Of The Bulls). One side could be Humano and one side could be Torro.
For a France theme, you could call a coaster Mona Lisa. One side could be Smile and one side could be frown.

Joust is a good one with one side Black Knight and the other White Knight. Dual, like the movie where teh truck is always chasing the guy. Duel as in a gunfight one side Good Guy other side bad Guy, lol.

I did a 4 coaster racer... Earth, Air, Fire, and Water... i lost it due to an HD crash.
Ooh! Biblical! Gabriel and Azrael!
Jay and Silent Bob!
Chevrolet and Ford! (the Ford coasters wheels all fall apart...)
And of course, my all time favorite:
tri-tracked steel minis themed to Blossom, Bubbles, and Buttercup, collectively known as THE POWERPUFF GIRLS!
