3 kinds under 10, and you only have one day? I would highly suggest just spending the entire day at Disneyland. Personally, I'd probably be able to spend a whole week at Disneyland and still have fun.
Go to Disney. Save Ghostrider for a day that you can enjoy it many times without all the rugrats scampering around. :)

I would ask the question: how tall are the kids? If they are over 48", I would reccomend DCA. it's a very fun park, it doesn't get too crowded, Screamin' is great, if you're into simulators, you might really like Soarin' (it's not my thing at all, but those who likes sims LOVE it), the rapids is fun, and it's Disney! Now, if your kids are 48" and *LOVE* coasters, then you might want to take them to Knott's.
Knott's does not offer much at all for kids under 48". After the PP accident, they have raised height restrctions from 42" to 48" on Jaguar, Wipeout, Chairswings, and the Falling Star. Dallas' favorite coaster was Jaguar, now he's 2 inches too short! It was a real shame. At Knott's there is Kingdom of the Dinos, Log Flume, Calico Mine Train, Scrambler, Pirate Ship, Rapids, and Camp Snoopy for those under 48". At DCA there are the 2 3D movies, Soarin' (need to be 40) Millionaire, the Sun Wheel, Wild Mouse (42") some flat rides, Rapids (42"), and some play areas.
So there's what you have! Dallas seems to have a better time at DCA right now because there is more for him to do, but once he's 48" it will be interesting to see if Calif' Screamin' beats out GhostRider and Montezooma's Revenge.

2002 - the year of IB's LoCoSuMo!!
Yeah, just about all of the major parks in SoCal need a full day. Especially DisneyLand. Crowds were light, and we JUST barely did everything we wanted to. I would have liked a second day at DisneyLand alone. I say just pick one and go with it.
(Of course, if you are passing up Disney, you ARE passing up the best dark ride collection in the world. :) )
