where and what do they make the cars from for each coaster?
I think they make the coaster trains in the factory with the track but I could be wrong. They make many coaster trains out of fiberglass.
They use fiberglass for the bodies and of course for restraints they use, well padding. Some use metal with soft vinyl or rubber outing. Except for Gerstauler trains, they use metal lap bars (OUCH).

Trains are usually supplied by the coaster manufacturer.
The Philadelphia Toboggan Company (PTC) build a majority of the wood coaster trains. They did just start to manufacture steel coaster trains as well. I don't think they are on the market yet though.

The frames of all modern coaster cars are steel. The body sits on the frame and is made of fiberglass and/or wood. The seats are usually steel framed with wood, fiberglass, or thermoplastic seating surfaces.
Of course, some of the really old cars are wood framed. Good examples are Jack Rabbit at Kennywood or Leap the Dips at Lakemont. You can tell wood framed cars by the distinctive feel of the pieces of the car wiggling around.
Morgan Manufacturing provided trains for the majority of woodies in the late 80's/early 90's. Colossus is a good example.
