Well, if you could somehow access the speedometer on the coasters (you might be able to ask park management), you could do a study on the maximum speed (dependant variable) of a coaster with respect to it's height, angle, train type, temperature, number of people on the train (independant variables) etc. etc. etc.
Similarly, without access to the speedometer, you could time the circuit (dependanat) and compare it to number of riders, or time of day (independanty variables). You could do this same experiment for multiple coasters.

This is a far fetched idea but I applied it in a simular case this year.
Independent Variable: Type of person
ie: shy vs excentric
Dependent Variable: How theyn react on certain rides.
ie: a white knuckle vs. a screamin' machine
I have been on rides with all kinds of GPs. You could base it on experience if your allowed.
