Halloween’s ghosts and goblins had scarcely disappeared before Florida’s theme parks unveiled their holiday celebrations for Thanksgiving through the New Year. Most of the events are included with admission and are during regular park hours.

If you've never seen the Osborne Family lights at Disney Hollywood Studios, I strongly suggest checking it out. Really is one of the most amazing things I've ever seen.
The OFL aren't completely secular, there are some religious components also. In fact, the Flying Spaghetti Monster has been hidden in the mix in past years.
Pity they don't start that one a week earlier. I've been able to see it mostly set up, but only on days that the park closes at 5pm, and therefore only in daylight...
(What's with the early closing times at the Florida parks during the shoulder season, anyway? Instead of running 9am-6pm, why don't they run 12pm-9pm?)

I'd imagine one reason the hours are oriented to the morning to allow for super-popular character breakfasts and the like to still occur while shortening the operating day due to the lesser crowds.

Even City Walk and Downtown Disney are empty those times of year in the evening, so it would stand to reason that people just aren't "out" during that time.
My guess is that it would be more expensive to operate the parks at night. Simple, yes...but probably true.
And, I agree with Jeff. I've seen the Osbourne lights numerous times and I still get a kick out of them. Watching my kids faces light up as bright as those lights when they see them is a pretty good moment as well.
