The Festa Italia section sports a few flats...a swinging ship was one of them (yawn, it's non-inverting), and I think there's another one I'm not recalling at present, but "the Cradle".....WILL rock.
Overall, the park was pretty sparse on flat rides...but DO check out Corkscrew Hill (we need a report on it, LOL).

The Tradewind (Mack Musik Express) is one of my favorites. The ride has a neat look to it with its gold interior and yellow cars and the park pumps Roman Gladiator-style music through the speakers. Very cool indeed. I do miss the Mack Sea Storm and the Vekoma Canyon trip though....
And even though it's not a flat, be sure to ride Escape From Pompeii. This themed Intamin Spillwater (Chutes) ride is one of the best water rides I have ever done. While it's a rather brief ride, the special effects alone are worth the trip.

I really like BGW's flats selection. While it does have a 70s/80s-ish feel, they've got some real good ones. Tradewind and The Flying Machine are both hoots.
I agree with the comments about the park's Steam Train Railroad. It's one of the better ones out there. You go across two HIGH trestles over the Rhine River, and then wind out through the woods where Drachen Fire use to be. Very peaceful and relaxing.
In addition, ride the trains too, very senic and a great way to hop areas in addition to the sky ride.
Also dont miss the shows, they are very good. I once got to see the Cradle of Riverdance (the "next generation" of Riverdance) do an hour and a half show in their outdoor theatre in France, for free! Talk about getting your money worth, a show and a theme park :).
