Generally I hate any ending that gradually slows down (.59, Absolute, Sakura, Mikeneko Rock). I also hate Insertion, because it speeds up, but it's so easy, unlike the rest of the song. It wastes potential.
The endings I like most are the ones that are the hardest part of the song, or have something really unique about them. My faves are:
Afronova: the classic triplet ending. Impossible on heavy though.
AM-3P: I like how the jumps move you diagonally across the pad.
Dead End: Probably the most energetic ending, with triplet jumps separated by quick eighth notes.
Drop the Bomb: Fast and fun, the only hard part in the song.
Gentle Stress: Fits the music perfectly.
Ska a Go Go: Whee, 4 straight measures of 16th notes! (or 9, in standard).
Super Star: Sixteenth-note runs again, this time they match the rhythm.
Twin Bee: I dunno, I just like stepping to the rhythm of an 8-bit video game noise. ;)

2. HV: AM: I mean, c'mon...that has got to be the best ending ever! Especially after finishing that massive run of notes.
3. Afronova: I've only been able to hit all the notes about 3 times, but I love it. And it completely wows the crowd if I get them all.
4. Paranoia Evolution: I dunno, there's just something about a stream of arows then a sudden stop that makes me love it so much. (the expolsion at the end of the song helps dramatically as well)
5 MAX 300: After suffering through about 500+ steps at 300 bpm, ANY kind of ending on that song is lovely...trust me.
6. Xenon: lots of quick 16 note runs in there. I like it.
now for the one's I hate:
1. Sync: I love going through the song, but the end is just...just blah! I mean, it's boring...the song goes from 3fter, to 8fter, to 5fter, to 9fter, to 9fter, to 9fter, and prety much stays like that till the ending, where it goes back down to about a 7fter, then what seems like a lil 2fter =P
2. Drop Out: naaah...too much jumping
3. Exotic Ethnic: somewhat like sync...fun to play through, but the ending is pretty plain.
4. Era: need I say more?

I love Drop Out's jump ending though.
The one part of Tsugaru Apple Mix that I like better than the original is the ending. It's the same rhythm but the arrows are different - they make you do a crossover.

Let the Beat Hit 'Em! (IIDX): The rest of the song is 'eh' but the triplet ending rocks!
Bad
321 Stars: I dunno why but I always trip over my feet as I'm finishing up this song...
Groove 2001: I hate this song anyway, but repeating that annoying rhythm three times in a row sucks. I hate the DDRMAX Oni with this song in it.
