I wouldn't stay at the Hard Rock, however, not for $200 or so a night. There are plenty of hotels you can get within 5 miles that are anywhere from $40 - $140 a night.
As for the weather, beware about 4pm - 6pm, there's likely to be a quick thunderstorm. But it will be over and mostly dry within an hour, and helps to cut down the crowds. Have fun!
Jason, let me be the cheery voice of encouragement: Early June is fine. Someone posted that schools let out in late May or early June. I have a half-dozen teachers in the family and can assure you that school has never gotten out in May. It is usually between the second and third week of June. It will be that way this year too.
So, if by early June you mean the first week in June, weekdays will be heaven. The second week should still be nice, though with a bit more of a crowd trickling in. After that, all bets are off though late June is still better than the month of July.
Either way, I can't stress this next point enough: Get there when the park opens at 9am. As far as IOA goes you will be able to do ALL of the thrill rides well before lunch and then be able to spend the afternoon absorbing the themed bliss before taking on re-rides before closing. USF is a much wider park so it's not as easy to get around and a lot of the attractions are time-consuming -- so, whether it's peak season or not there, you will be spending time there anyway.

Paris....Sorry your wrong about school getting out. The last day of school for Palm Beach County schools is May 31. College and high school seniors get out even earlier than that. Now each county down here is different but I dont think they get out to much later than Palm Beach County schools.
Also you can find rooms at Hard Rock for $150 a night, and in mid June there new hotel The Royal Pacific opens. There rates are around $100 a night. Both are worth it if it means no lines.
I would suggest using the Fast Lane passes and you can get right on if the line is really long or if your group doesn't mind getting split up, most rides have single rider lines which get you on fairly quickly as well. I would suggest this for Spiderman, but the rest should be less than 45 minute waits for Hulk, Dr. Doom, and the water rides. I've never waited over 15 minutes for the Dragons.

Hockey, mea culpa. The Dade and Broward County schools always get out in June, but I see, you're right, I'm wrong on this.
Lee County gets out on May 30th.

Either way, you're going on weekdays while the locals tend to hit the park on the weekends. So, yes, some of the area schools will be out, but the parks should still be very doable.
